Good speech recognition under an open licence can be run on your own machine without sending audio to someone else's service.

Granite Speech 5.0 2B understands English, French, German, Spanish, Portuguese and Japanese, translates into languages including Italian and Chinese, and ranks second among open speech recognition models with an average English error rate of 5.06% (according to IBM). The fast Turbo CTC version with 470 million parameters reached 19,870 RTFx. The updated 4.1 2B Plus makes 7% fewer speaker identification errors, and timestamp accuracy more than doubled. The models are available under the Apache 2.0 licence; there is prompting with a list of up to 2,000 words, punctuation, and robustness to noise.
